Strawberry Prosecco Cupcakes
Ingredients
Cupcakes
- 1 Box of Strawberry Cake Mix
- 5 Tbsp Vegetable Oil
- 3 Egg Whites
- 1 C Prosecco
- 8 Strawberries, diced
Frosting
- 13 OZ Powdered Sugar
- 4 Tbsp Butter, softened
- 1.5 Tsp Vanilla
- 3 Tbsp Prosecco
Topping
- 4-6 Strawberries, sliced
- 1 Tsp Sugar
Instructions
Cupcakes
- Preheat the oven to temperature mentioned on the back of your cake box.
- In a large mixing bowl, add first four cake ingredients. You can either use a whisk or an electric hand mixer, and mix together until smooth. Add strawberries and fold in with a baking spatula.
- Spray a cupcake tin or add cupcake holders. Add in batter and bake for 20 minutes.
- When done baking, set out to cool for 20 minutes.
- Add to cooling rack and let cool another 20 minutes
- Meanwhile, while cupcakes cool on rack, make frosting. In a stand mixer with a bowl, or a large bowl with an electric hand mixer, add frosting ingredients, a little at a time and mix until smooth. Keep aside.
- Make topping: take strawberry slices and sprinkle on sugar. Let sit for the rest of the cupcake cooling time.
- Add frosting to cupcakes and top some with the strawberries.
- Enjoy!
