So I don’t know that this is the traditional name for this, but its just yummy and fun, and I feel like most beach side restaurants I have been to on various vacations, have had Caesar salad in this form, so it reminds me of that. I’m sure its made the same many other places, but its just one of those lunch grabs I get when out to lunch near the beach on a trip. However, we totally tried this for dinner tonight and it was awesome!!

I don’t know the official name for it, but lets go with Taco Salad Bowl Shell Fryer/Molder/Maker? So you will first heat your oil to 375 degrees Fahrenheit, you can use a candy thermometer which is usually what I use, to make sure it gets to that temp. It was also quite entertaining if I do say so myself, Joe and I figuring out how to use the thing wondering if we put it in or under the basket. So FYI: It goes under! I basically plopped the tortilla, which was a larger burrito sized flour tortilla, and used the tortilla shell mold to push down and it ended up forming the shell.
The oil does take awhile to heat up so before I even made those shells, I took two chicken breasts, cut them in half, tenderized and seasoned them. You can use whatever your little heart desires, but I used salt, pepper, some seasoning salt and Tajin seasoning. I cut into pieces and sauteed in a tsp of olive oil on med-high heat for about 5-7 minutes, or until chicken reaches internal temp of 165 degrees.
Take your chicken off skillet and set aside in a bowl or plate. After this, its time to cook your romaine. That is right! It’s soooo good. I’ve had grilled romaine Caesar salad, so similar concept. But this really kind of reminds me of like a wilted lettuce salad, Caesar style. Its a salad, but still savory, so its kind of a great winter salad if you think about it. You can season these as well with whatever you want. Cook on all sides for a few mins each, until lettuce is wilted looking and it will kind of have a char to this. This is good and what you want. Once these are done, chop them up and place in a bowl. Put in Caesar salad dressing to liking, and squeeze juice of half a lemon and stir. add in some fresh cracked pepper to taste.
Now is the time to fry your shells! So put the tortilla in oil and press down with mold, cooking 2-3 minutes until shells are golden and crispy. Set on plate lined with paper towel to absorb some oil for a few minutes. Now add your Caesar Salad, into each bowl, filling them up pretty well. Top with chicken and croutons or some fresh grated Parmesan if you wish. Enjoy!!
Beach Side Grilled Romaine and Chicken Caesar Salad
Something that reminds me of Summer time, perfect for anytime of the year.
Equipment
- Tortilla Bowl Mold/Fryer
Ingredients
- Large Burrito Style Flour Tortillas
- Oil (a lot for deep frying shell bowls)
- 2 Chicken Breasts, halved and tenderized
- Favorite seasonings for chicken breasts
- 3 Hearts Romaine Lettuce
- Favorite Seasonings for Romaine
- Favorite Caesar Salad Dressing
- Juice of 1/2 of Lemon
- Fresh Cracked Pepper
- Croutons of choice
- Freshly Grated Parmesan for Topping
Instructions
- Heat Oi in Medium-Sized Stock Pot l to 375 Degrees.
- Heating Oil may take some time, so in mean time, add chicken to skillet with one tsp olive oil, season, then stir occasionally, about 5-7 minutes or until fully cooked to 165 degrees.
- Turn heat off, remove chicken from skillet and put in bowl or plate and set aside.
- In same skillet, heat more olive oil. Add romaine and season to liking. Cook on all sides about few minutes per side, or until lettuce looks wilted and a little charred. Take off skillet and chop lettuce and put into salad bowl.
- Add your Caesar dressing to liking, lemon juice, and cracked pepper.
- Now fry your shells. Take tortilla and plop on oil and quickly take mold and push down and keep down in oil for about 2-3 minutes, or until golden crispy. Remove with tongs and place on plate with paper towel, to absorb any excess oil.
- Add salad to bowls, and top with chicken, croutons, and Parmesan.
- Enjoy!
