Tonight was definitely a dinner made by inspiration! Not too long ago, I came across a YouTube channel, Views on the Road, and if you haven’t… you have got to check out her channel. It’s incredible, and I’m slightly obsessed, because there are so many great videos on there with delicious grub. By that I mean I’ve saved quite a few of her recipes to try, and I’m super excited because they all look SO GOOD!
Tonight I made her recipe for Salsa Verde Fideo, and errrmegerhdd. It was SOOOO good! I mean hello? Salsa Verde. Nuff Said.
It basically started out with roasting some tomatillos, poblano peppers and Anaheim chili peppers.
From there I was able to blend those in my Cuisine Art Bullet Blender. I did make sure I let them cool for about 15 minutes just to be safe with my blender. (Salsa Verde smoothies can be a thing, right?!)
I sat that aside, and heated some canola oil in my ceramic Dutch Oven, and added a bag of fideo and stirred for awhile until it was a little browned. I added my onion and garlic and stirred for a it longer until soft and fragrant. From there the water was added along with chicken bouillon. She did have some Knorr Brand Chicken Stock Concentrate, I believe she may have it in her Amazon store front, that was mentioned as being MSG Free. I did want to buy this but alas… forgot. 🙁 I saw there was another brand of Chicken Stock concentrate but… I do like the Knorr Brand for flavoring, so I chose my battle. After adding my bouillon, I added my salsa verde and ladled water into the cup to pour back out, until it was all in my dutch oven. I brought to a boil and cooked for about 6 minutes. It wasn’t in the recipe but I also had a can of hominy, so I figured, “eh, why not?”
End result: Comforting and delicious!!! For the full recipe I will post her link, because it is worth watching and she’s very step-by-step on everything you want to know. The comfort of her kitchen resonates through the videos they are seriously great!
