In addition to the fantastic gumbo we had tonight, this was the perfect way to top off the night. This was inspired by a cooking class my Fiancé and I had taken in NOLA, and is by far the perfect way to wow your friends and family with a actually not too hard dessert. I hope you love it!
Bananas Foster Crepes
Ingredients
Batter
- 1 C all purpose flour
- 1/2 C Whole Milk
- 1/2 C Water
- 1/4 tsp Salt
- 2 Tbsp Butter, melted
Bananas Foster Sauce
- 1 Stick Butter
- 1 C Dark Brown Sugar
- 2 Bananas
- 1 Shot Banana Liqueur
- 1 Shot Dark or Dark Spiced Rum
- Ground Cinnamon for sprinkling at end
- Ice Cream (we love butter pecan with this but use vanilla or whatever floats your boat.)
Instructions
Batter
- In large mixing bowl, mix all of the batter ingredients. Now you can actually make crepe batter the night before, 30 minutes before, but if you are antsy… I have made this and then went to make my sauce and it was fine to use by then.
- Heat a smaller/medium sized skillet or crepe pan with cooking spray. Add a scoop (I use a 3/4 measuring cup) and ladle some batter on a pan. Pick up and swirl around until batter spreads and crepe is thin. Cook for 15-20 seconds and then with a spatula turn over and cook another 15 seconds. Fold into triangle and place on plate.
Bananas Foster Sauce
- Melt butter on medium high heat. Add brown sugar and cook until it becomes thick and creamy. Let cook over medium heat for 5 min.
- Stir in banana liquer, and rum and cook for another minute or 2. Add in bananas and sprinkle cinnamon. Note: Some will actually flambe the sauce, you can do this but BE VERY CAREFUL. If you have a cooking hood of any sort make sure all grease is cleaned. I have done without and it is fine as well if you wanna stay on the safe side.
- Add ice cream on top of crepes, followed by sauce. Serve Immediately.
