If you follow my TikTok and Instagram page, I did make a variation of this with avocado included which I call a California Melt (Which is a delish way to make this!)
Today we had some leftovers from last night. The avocado was utilized this morning for a breakfast sandwich. (FYI: Toasted Ezekiel English Muffin + Spread of Mayo + Avocado + Fried Egg + Green Chile Hot Sauce)
However, this yummy chicken dish was equally as delish and was a piece of cake to throw together!

Cheesy Balsamic Chicken and Mushroom Melt on Toasted Sourdough
Ingredients
- Olive Oil, for cooking
- Slice of Sour Dough
- Pinch of Sea Salt
- Chicken Breast or Tender that has been tenderized and cooked
- Shredded Mozzarella Cheese
- Sliced Mushrooms
- Balsamic Glaze
- Sliced Almonds
Instructions
- Heat Olive Oil in a skillet that comes with a lid. Place sour dough and drizzle a little more olive oil on the side facing up if needed. Cook on both sides until toasted and a golden color. Turn heat off. Take the slice of sour dough and place on dish of choice and sprinkle with a little sea salt.
- Place cooked chicken in the same skillet a long with a sprinkle of shredded mozzarella on top of chicken, and mushrooms surrounding the chicken. Cover with lid and cook on medium/medium-low, until mushrooms are tender and cheese is melted.
- Take chicken with tongs and place on top of sour dough.
- Take a spatula and dish the mushrooms on top and alongside the chicken and sour dough.
- Drizzle balsamic glaze on top of chicken and mushrooms. Sprinkle sliced almonds on top.
- Serve and enjoy!
