Heat Olive Oil in a skillet that comes with a lid. Place sour dough and drizzle a little more olive oil on the side facing up if needed. Cook on both sides until toasted and a golden color. Turn heat off. Take the slice of sour dough and place on dish of choice and sprinkle with a little sea salt.
Place cooked chicken in the same skillet a long with a sprinkle of shredded mozzarella on top of chicken, and mushrooms surrounding the chicken. Cover with lid and cook on medium/medium-low, until mushrooms are tender and cheese is melted.
Take chicken with tongs and place on top of sour dough.
Take a spatula and dish the mushrooms on top and alongside the chicken and sour dough.
Drizzle balsamic glaze on top of chicken and mushrooms. Sprinkle sliced almonds on top.
