If you remember, not too long ago I made a dish similar to this. The Greek Chicken and Greek Yogurt Dill Sauce. (I will post link to it below.) This is basically the same thing, only added to a salad, with some chickpeas! Salads are one of those things I love, but it always gets thought of as a starter or side, and never as the main event. But to make things easy I made this to be the whole shebang of your dinner. No need to mess with sides. No need for a few different plates for different things, just one bowl/dish… one love. Haha. Not to mention I love my chicken made this way, it reminds me of a chicken gyro kind of, and decently healthy? I’m not a health foods specialist or expert by any means, and there is some sodium from seasonings added to this, but remember when you are holding the spatula, spoon, whisk, knife, whatever kitchen utensil you are using, you are in control, so always play around and add or subtract what ya need to, to dishes. That is the whole magic in it anyways, right? I hope you enjoy.

Souvlaki Greek Chicken Salad
Ingredients
- 1 C Romain Lettuce, chopped
- 12 Cherry Tomatoes, halved
- 3 Artisian Cucumbers, 2 sliced for salad, and 1 grated for greek yogurt sauce
- 1 Tbsp Parsley, chopped
- 1 Can Garbonzo Beans, rinsed and drained
- 2-3 Chicken Breasts cut into strips or cubes.
- Greek Seasoning to taste
- Salt and Pepper, to taste
- Seasoning salt, to taste
- Feta for topping
- 2 Roma Tomatoes, diced
- 1 Shallot, diced
- 1 Clove of Garlic, minced
- 1/2 C Plain Greek Yogurt
- Dill Seasoning, to taste
Salad Dressing
- Olive Oil
- White Vinegar
- Lemon Juice
Instructions
- Rinse and drain chickpeas, and set aside.
- Toss romain, cherry tomatoes, cucumbers, and parsley into large salad bowl.
- Make salad dressing: its an eyeballer but mix a little olive oil, white vinegar, and lemon juice. Set aside
- Make Greek Yogurt Sauce: Combine grated cucumber, garlic, greek yogurt, and dill seasoning to taste, and greek seasoning to taste. Set aside.
- Put cut up chicken into a bowl and season with greek seasoning, salt, pepper, and seasoning salt, to liking. Combine until coated in seasoning.
- Add olive oil to large skillet, and heat to med-high heat. Add chicken and cook without stirring for a bit about 3-4 minutes, until chicken starts to brown.
- Add shallots and cook, stirring occasionally, until shallots are soft and gragarant and chicken is fully cooked, about 4-5 minutes.
- Add tomatoes and cook until warmed through with chicken and shallots, about 1-2 minutes longer.
- Now plate in this order: put salad in bowl or on a dish. Drizzle dressing on top of salad. Add chicken mixture and chickpeas. Top with greek yogurt and feta crumbles.
