Toasted Turkey Tostadas

Ingredients
  

  • 1 lb Ground Turkey
  • Spray Oil
  • 1 Package Low-Sodium Taco Seasoning
  • 1 bar shredded lettuce or shredded cabbage
  • 1 jar salsa
  • 2 avocados
  • 20 cherry tomatoes, diced
  • 1 bag low-fat or fat-free shredded cheese
  • 8-10 Corn Tortillas
  • Optional sides: Spanish rice and sweet corn warmed in the microwave and topped with Cajun seasoning

Instructions
 

  • Brown the ground turkey: Heat a pan over medium heat and spray it with a bit of spray oil. Add the ground turkey and cook until browned, breaking it up into crumbles as it cooks.
  • Toast the tortillas: While the turkey is browning, place your corn tortillas in a regular drop-down toaster. Set the toaster to level 5 or medium heat. Allow the tortillas to toast until they are slightly crispy and still pliable.
  • Assemble the tacos: Gather your toasted tortillas and begin assembling your tacos. Start by adding a portion of the seasoned ground turkey to each tortilla. Top with shredded lettuce or shredded cabbage, a dollop of salsa, sliced avocados, diced cherry tomatoes, and a sprinkle of low-fat or fat-free cheese.
  • Optional sides: Serve your Toasted Turkey Tostadas with optional sides such as Spanish rice and sweet corn warmed in the microwave and topped with a touch of Cajun seasoning for added flavor.
