Lemon Garlic Shrimp with Roasted Vegetables

Ingredients
  

  • 1 lb Shrimp Peeled and deveined
  • 3 cloves Garlic minced
  • 2 Tbsp Extra Virgin Olive Oil
  • 1/2 Lemon juiced
  • Salt and Pepper to taste
  • Mixed Veggies (Such as cherry tomatoes, broccoli, and bell peppers)

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, whisk together olive oil, garlic, lemon juice, salt, and pepper.
  • Add the shrimp to the bowl and toss to coat evenly.
  • Spread the vegetables on a baking sheet and toss with a little bit of olive oil.
  •  Place the shrimp on the baking sheet with the vegetables and roast for 8-10 minutes or until the shrimp are pink and cooked through.
  • Serve hot and enjoy!
