Seared Chicken, Onion, & Pepper Wraps with Hummus

A quick fix for those with a hectic schedule, that isn't nearly as bad as fast food.

Ingredients
  

  • 3 Tsp Olive Oil
  • 2 Chicken Breasts - Trimmed, halved, tenderized and cut into 1/2 inch pieces
  • 1 Red Bell Pepper, sliced
  • 1 Orange Bell Pepper, sliced
  • 1 Onion, sliced
  • 2 Heaping Tbsp Hummus
  • Seasoning Salt, to taste
  • Ground Black Pepper to taste
  • 2-3 Wraps

Instructions
 

  • Place Chicken pieces in a bowl, and season with pepper and Seasoning Salt and stir.
  • In a separate bowl, place your bell pepper and onion slices in and season with seasoning salt and pepper, as well.
  • On medium high heat, heat olive oil in a medium to large skillet. Add chicken and cook until fully cooked, stirring occasionally, about 6-7 minutes. Take chicken off skillet and put on plate, and set aside.
  • In the same skillet, add a little more olive oil if needed, add the vegetables and saute, stirring occasionally until softened, about 4 more minutes. Add chicken back to skillet and mix with veggies, turn off heat. 
  • Put one tablespoon of hummus, on each wrap, and spread. Spoon on chicken and veggie mix on and wrap up. 
  • Enjoy!

Notes

*We served it with Hyvee Frozen Sweet Potato Fries heated in the Air Fryer at 390° for 12 minutes.
*This realistically made enough for about 3 wraps, but because it is just my Fiance and I at home, I made two so with the leftover chicken & veggie mix I just stored away in my fridge, so we can either make another wrap tomorrow for lunch or it can serve as a quick healthy heat-up lunch after a workout. Easy peezy!
