Pat-dry Pork Chops, and season with salt and pepper.
In a Cast Iron over Medium-High heat, put oil in, add Pork Chops and cook about 5 minutes per side or until cooked all the way through, and browned.
Meanwhile, mix your lime juice, almond butter, garlic, honey, and salt and pepper to taste.
Take Pork Chops out and set aside, putting foil on top to keep warm. Add more oil to pan, followed by your rice, stirring to heat though. Add your lime-almond butter mixture and stir to combine. Next you will add your spinach, a little at a time is fine, and stir and cook until spinach is wilted. Add your pork chops back to skillet and garnish with walnuts and lime wedges if you wish.
