Fried Cabbage and Sausage Spaghetti Squash Boats

Ingredients
  

  • 2-4 Tbsp Butter
  • 1 Tbsp Olive Oil
  • 1 Onion, diced
  • 4 Garlic Cloves, minced
  • 1-2 Links of Kielbasa Sausage, sliced
  • 1/2 Large head of cabbage chopped and shredded, or one whole if small
  • Salt and Pepper, to taste
  • Seasoning Salt, to taste
  • Tony Cachere's Creole Seasoning, to taste
  • 1 Spaghetti Squash

Instructions
 

  • Take spaghetti squash and microwave whole, for 30 seconds-one minute.
  • Take Spaghetti Squash out and puncture with forks throught the squash. Put back in microwave and cook for one more minute.
  • Take Spaghettin Squash out, and being save, cut into two lengthwise halves. Scoop out guts and seeds.
  • Put on a plate or microwave safe dish with 1/4 cup of water, Spaghetti Squash Boats face down and microwave for 12 minutes.
  • Meanwhile, in a dutch oven, on medium-high heat, add butter and olive oil and let butter melt. Add onion, and cook stirring occasionally until soft and translucent, about 3-4 minutes.
  • Add garlic and cook, stirring frequently, until fragrant, about 30 seconds.
  • Add in kielbasa and cook, stirring occasionally for 4-5 minutes.
  • Add cabbage and cook until soft and tender, if needed cover with lid to softer up. Add seasoning to liking.
  • Take Spaghetti Squash out of the microwave and set on baking sheet or cutting board. Put on a little butter and seasonings of your choice, and scrape until spaghetti appears.
  • Scoop cabbage and sausage mixture into spaghetti squash boats and serve.
