Savory Mushroom and Spinach Eggs

Quick. Easy. Healthy. Delicious.

Ingredients
  

  • 2 Tsp Olive Oil
  • 1/4 C Sliced Mushrooms
  • 1/2 C Spinach
  • 2 Tsp Dried Chopped Onion
  • 4 Large Eggs
  • Dried Basil, to liking.

Instructions
 

  • In a very small little frying pan, heat olive oil on medium heat. Add your onions and mushrooms and cook, stirring occasionally, until mushrooms tender and shrunk a little, about 4 minutes.
  • Add in spinach and cook until wilted up a bit, about 3 minutes. Feel free to add just a little drizzle of olive oil if you feel needed.
  • Add eggs to pan and cook without scrambling at first, add dried basil. Work a fork around the edges to keep from burning. Scramble twords the end when the bottom feels like it is more cooked.
  • Plate and serve immediately.
