Oven Roasted Beets & Salmon Sheet Pan Dinner with a side of Sautéed Spinach and Beet Greens

Ingredients
  

Salmon and Beets Sheet Pan

  • 1 Bunch of beets (with the greens attached) diced into cubes
  • Olive Oil
  • 4 Cloves Garlic, minced
  • Cooking Spray
  • Salt and Pepper, to liking
  • Old Bay Seasoning, to liking
  • 2-4 Salmon filets
  • Salt and Pepper for seasoning
  • Old Bay Seasoning, for salmon

Sauteed Spinach and Beet Greens

  • Olive Oil
  • 1/2 Tbsp Lemon Juice
  • Red Pepper Flakes, to taste
  • Sea Salt, to taste
  • 9 oz Spinach Leaves, fresh
  • Beet Greens left from Beet Bunch

Instructions
 

Salmon and Beets

  • Heat oven to 400 degrees.
  • Line baking sheet w/ foil.
  • Put diced beets into a medium sized bowl, and mix a little olive oil, 4 garlic cloves, salt & pepper to taste, old bay, to taste. Stir to combine.
  • Add to one side of baking sheet. Put in oven and bake/set timer for 50 minutes.
  • Meanwhile, pat dry salmon on cutting board and season.
  • When there are 12 minutes left on the clock, pause your timer, and take sheet pan out. Stir up beets a bit. Spray other half of the baking sheet and add salmon. Put back into the oven for the remaining 12 minutes, until salmon and beets are fully cooked. Take out of oven and serve with Spinach and Beet Greens.

Spinach and Beet Greens

  • Rinse all leaves
  • Heat olive oil in large pan or nonstick skillet, on medium-high heat. Cook until soft and wilted up. Add lemon juice and stir to combine.
  • Add seasonings and stir. Serve with Salmon and Beets.
