3CQuinoa, cooked (it'll be about 1 cup when uncooked before you put it in.)
1Onion, diced
4ClovesGarlic, minced
1bagFrozen mixed veggies, thawed out
2-3Large eggs
Fish Sauce, Liquid Aminos, or Soy Sauce to taste
Olive Oil for cooking
Instructions
In a Wok or large nonstick skillet, heat olive oil on med-high heat. Add in onions and cook, stirring occasionally, until soft and translucent, about 3 mins.
Add garlic and cook, stirring frequently, until fragrant, about 30 seconds to a minute.
Add in your quinoa and mixed veggies, and stir until heated through. Add fish sauce, or soy sauce to taste.
Heat a seperate frying pan with cooking spray, on med-high heat. Add eggs like you would if you were frying them and just scramble onto the pan. Add to quinoa mix and stir until well combined.
Serve in bowl and enjoy!

*I was a little hungry so I put a half of sliced avocado on top and it was delish!
