Fried "Rice" Quinoa Bowls

Ingredients
  

  • 3 C Quinoa, cooked (it'll be about 1 cup when uncooked before you put it in.)
  • 1 Onion, diced
  • 4 Cloves Garlic, minced
  • 1 bag Frozen mixed veggies, thawed out
  • 2-3 Large eggs
  • Fish Sauce, Liquid Aminos, or Soy Sauce to taste
  • Olive Oil for cooking

Instructions
 

  • In a Wok or large nonstick skillet, heat olive oil on med-high heat. Add in onions and cook, stirring occasionally, until soft and translucent, about 3 mins.
  • Add garlic and cook, stirring frequently, until fragrant, about 30 seconds to a minute.
  • Add in your quinoa and mixed veggies, and stir until heated through. Add fish sauce, or soy sauce to taste.
  • Heat a seperate frying pan with cooking spray, on med-high heat. Add eggs like you would if you were frying them and just scramble onto the pan. Add to quinoa mix and stir until well combined.
  • Serve in bowl and enjoy!

Notes

*I was a little hungry so I put a half of sliced avocado on top and it was delish!
