Pat dry Mahi Mahi, and season to liking with seasonings listed.
With hands, rub in seasonings to coat the fish.
Heat olive oil on a pan on med-high heat and sear fish 4 minutes per side.
Serve up with some veggies and brown rice, or sides of your choice.
*If you want to grill the fish instead, same timing, grill 4-5 minutes per side.
