Heat your oven to 400°
Line a baking sheet with parchment paper.
Add all chicken meatball ingredients in a bowl and combine by hand (I admittedly like to use some latex gloves for this but you can use your bare hands and wash well after.) Do this until well combined.
Roll into meatballs and place on baking sheet.
Bake for 30-35 minutes.
Add to a plate with your steamed butternut squash and rotini pasta.
Drizzle the honey mustard on meatballs.
Garnish with diced chives.
