  • 4 boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 2 tsp Weber® Garlic Parmesan Seasoning©
  • 1 tsp salt
  • 1 tsp onion powder
  • 4 cups broccoli florets, or a microwavable broccoli
  • Olive Oil Cooking Spray for Baking Sheet

Instructions
 

  • Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with foil and lightly coating with olive oil cooking spray (optional).
  • Take the chicken breasts and gently pound them to an even thickness using a meat tenderizer or rolling pin. This helps ensure even cooking.
  • In a small bowl, combine the olive oil, Weber Garlic Parmesan Seasoning, salt, and onion powder. Mix well to create a flavorful marinade.
  • Brush the chicken breasts on both sides with the prepared marinade, ensuring they are evenly coated.
  • Heat a skillet over medium-high heat. Add a drizzle of olive oil and sear the chicken breasts for about 2 minutes per side, or until nicely browned. This step adds a golden crust to the chicken and enhances its flavor.
  • Transfer the seared chicken breasts to the prepared baking sheet. If desired, lightly spray the chicken with olive oil cooking spray to promote browning and moisture retention.
  • Place the baking sheet in the preheated oven and bake for 25-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Cooking time may vary depending on the thickness of the chicken breasts.
  • While the chicken is baking, prepare the steamed broccoli. Place the broccoli florets in a steamer basket or a microwave-safe dish with a small amount of water. Steam the broccoli until tender yet still crisp, about 5-7 minutes.
  • Once the chicken is fully cooked, remove it from the oven and let it rest for a few minutes before serving. This allows the juices to redistribute, resulting in moist and flavorful chicken.
