Attention all busy people!!! You’re going to love these wraps, well at least I hope. We typically like to use Saturday, to get out and go out to dinner as a family, but with a little one that is sick and a mama on pure exhaust, that did not happen! But it all worked out, actually. So something about me is I like to plan my meals at the beginning of every week, and actually look forward to it. But things happen. Life happens, and things get busy/I forget to thaw out meat/I’m a little too tired to Jack with dinner, which happened this week, causing meals to get pushed up. Typically if they do I push a meal to the next week, so no biggie. But we were able to use yesterday’s meal, for tonight, so viola!But anywho. These wraps are super good, super easy and only several ingredients to make them, and not awfully too bad for you. I will honestly admit, that we don’t make wraps a ton for dinner, but I definitely think we need to make them more frequently because when we do, I love them! We used Sun-dried Tomato Wraps we found at ALDI, but use whatever your heart desires. Enjoy, friends!
Seared Chicken, Onion, & Pepper Wraps with Hummus
A quick fix for those with a hectic schedule, that isn't nearly as bad as fast food.
Ingredients
- 3 Tsp Olive Oil
- 2 Chicken Breasts – Trimmed, halved, tenderized and cut into 1/2 inch pieces
- 1 Red Bell Pepper, sliced
- 1 Orange Bell Pepper, sliced
- 1 Onion, sliced
- 2 Heaping Tbsp Hummus
- Seasoning Salt, to taste
- Ground Black Pepper to taste
- 2-3 Wraps
Instructions
- Place Chicken pieces in a bowl, and season with pepper and Seasoning Salt and stir.
- In a separate bowl, place your bell pepper and onion slices in and season with seasoning salt and pepper, as well.
- On medium high heat, heat olive oil in a medium to large skillet. Add chicken and cook until fully cooked, stirring occasionally, about 6-7 minutes. Take chicken off skillet and put on plate, and set aside.
- In the same skillet, add a little more olive oil if needed, add the vegetables and saute, stirring occasionally until softened, about 4 more minutes. Add chicken back to skillet and mix with veggies, turn off heat.
- Put one tablespoon of hummus, on each wrap, and spread. Spoon on chicken and veggie mix on and wrap up.
- Enjoy!
Notes
*We served it with Hyvee Frozen Sweet Potato Fries heated in the Air Fryer at 390° for 12 minutes.
*This realistically made enough for about 3 wraps, but because it is just my Fiance and I at home, I made two so with the leftover chicken & veggie mix I just stored away in my fridge, so we can either make another wrap tomorrow for lunch or it can serve as a quick healthy heat-up lunch after a workout. Easy peezy!
