Date night with your special someone? Or hell, maybe a night to yourself with some deliciousness and wine, in your jammies, on the couch in the comfort of your own home, watching whatever suits your fancy. This dish is it!
In fact, I love the ambience and comfort of being in my own home, in my comfiest of clothes, candles, (usually fake ones, for the little ones safety. And so I don’t forget to blow them out, ha!) and my favorites movies, and I LOVE LOVE a dish that pairs with that, and this is one of these. So I hope rather you’re sharing this dish with someone, or keeping it to yourself, that you enjoy your evening and some delicious eats.

Shrimp Scampi-Alfredo Gnocchi Bake
Ingredients
- 1 Tbsp Olive Oil
- 1/2 Lb Medium to Large Sized Shrimp, deveined and tails removed. (Unless you prefer otherwise)
- Salt and Pepper, to taste
- 2 Tbsp Butter
- 6 Garlic Cloves, Minced
- 1.5 C Light Cream
- Juice of 1/2 of lemon
- 1/2 C Freshly Grated Parmesan
- Panko Bread Crumbs, for topping
- Olive Oil of Bread Crumb Topping
- 16 Oz Gnocchi, Cooked
Instructions
- Preheat the oven to 400 degrees farenheit.
- Pat Dry and Season Shrimp.
- On medium high heat, heat olive oil in skillet and cook shrimp about 2-3 minutes, per side, and set aside. In same skillet, add butter and garlic, and saute about 30 seconds, until fragrant. Add broth or wine to deglaze the pan, scraping the brown bits at bottom and let reduce some.
- Add in cream and stir occasionally for a few minutes, adding salt and pepper to taste. Add parmesan and lemon juice and stir.
- Add Gnocchi and Shrimp to mini cast iron or small casserole dish, followed by sauce.
- Mix Panko and a little Olive Oil in a bowl, and stir to coat breadcrumbs. Sprinkle breadcrumbs until it coats the top of the Gnocchi and Shrimp.
- Put in the oven for 7-8 menutes, or until the panko is golden and crispy. If it isn't crisping fast, you can broil it but only about 20-30 seconds, being very careful not to burn the panko.
Notes
*If you want sauce to be a little thicker, use a heavy cream or a very small amount of cornstarch slurry.
*You can do your own thing and eat this solo, or split in half with a friend or special someone for a fun date night.
