This is the perfect comfort classic, mixed with the completely versatile spaghetti sqaush, and let me tell ya, folks… It…is…DELISH! This actually didn’t even happen on purpose either. I had planned on making some fried cabbage and sausage because it sounded really good, but had some spaghetti squash I bought for something else. Well I ended up not making it for that something else and one thing led to another and… Viola! We had Fried Cabbage and Sausage Spaghetti Squash Boats! It was a beautiful mistake to make.
Now, traditionally and typically I actually make this also with some bacon, which is also really good, the sodium and fat content from it gives it a great flavor, and you can use the bacon grease to cook your veggies and sausage in. But ya know what? Tonight I didn’t. Haha, it was more about what we had on hand, and I’ll be honest, sometimes those turn out to be the best damn meals! So I hope you like this spin on a comforting homestyle classic.
Fried Cabbage and Sausage Spaghetti Squash Boats
Ingredients
- 2-4 Tbsp Butter
- 1 Tbsp Olive Oil
- 1 Onion, diced
- 4 Garlic Cloves, minced
- 1-2 Links of Kielbasa Sausage, sliced
- 1/2 Large head of cabbage chopped and shredded, or one whole if small
- Salt and Pepper, to taste
- Seasoning Salt, to taste
- Tony Cachere's Creole Seasoning, to taste
- 1 Spaghetti Squash
Instructions
- Take spaghetti squash and microwave whole, for 30 seconds-one minute.
- Take Spaghetti Squash out and puncture with forks throught the squash. Put back in microwave and cook for one more minute.
- Take Spaghettin Squash out, and being save, cut into two lengthwise halves. Scoop out guts and seeds.
- Put on a plate or microwave safe dish with 1/4 cup of water, Spaghetti Squash Boats face down and microwave for 12 minutes.
- Meanwhile, in a dutch oven, on medium-high heat, add butter and olive oil and let butter melt. Add onion, and cook stirring occasionally until soft and translucent, about 3-4 minutes.
- Add garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add in kielbasa and cook, stirring occasionally for 4-5 minutes.
- Add cabbage and cook until soft and tender, if needed cover with lid to softer up. Add seasoning to liking.
- Take Spaghetti Squash out of the microwave and set on baking sheet or cutting board. Put on a little butter and seasonings of your choice, and scrape until spaghetti appears.
- Scoop cabbage and sausage mixture into spaghetti squash boats and serve.
- Enjoy!
