Oven Roasted Chicken Meatballs and Honey Dijon Mustard
Ingredients
Meatballs
- 1 lb Lean Ground Chicken
- 1 C Panko Bread Crumbs
- 1 Tbsp Tastefully Simple© Onion Onion Seasoning
- 1 Tsp Badia© Garlic Pepper Seasoning
- 1 large Egg
- Salt and Pepper to taste
Sides
- 1 bag frozen butternut squash, cooked in microwave per instructions
- Chickpea Rotini, cooked per instructions (I like to add a little butter and extra pasta water at the end.)
- Honey Mustard for drizzling at the end
- Diced chives for garnish
Instructions
- Heat your oven to 400°
- Line a baking sheet with parchment paper.
- Add all chicken meatball ingredients in a bowl and combine by hand (I admittedly like to use some latex gloves for this but you can use your bare hands and wash well after.) Do this until well combined.
- Roll into meatballs and place on baking sheet.
- Bake for 30-35 minutes.
- Add to a plate with your steamed butternut squash and rotini pasta.
- Drizzle the honey mustard on meatballs.
- Garnish with diced chives.
- Enjoy!
