A little baking and then some…
Homemade Sourdough Bagels and (Swipe to the end) English Muffin Bread!
Sourdough Bagels:
I essentially made these with the same ingredients I use for my sourdough (50 g active starter, 350 ml filtered water, 5 g salt, and 500g unbleached bread flour) and then added a couple tbsp of honey to the mix in a stand mixer bowl, and mix with the dough hook for 10 minutes. Once this is done I ball up the dough and put in a greased bowl or straight vessel with a lid, and cover and let sit for 12 hours or until more than doubled in size. Once this has completed I put out on a floured surface and I did laminate it some but not as much as I do for my loaves. I cut into pieces and rolled those into balls and poked holes into them and layed them on a baking sheet with parchment paper and cover for about an hour to let rise. After this I preheat my oven to 400 degrees F, and brought some honey water to a boil in my dutch oven. I then took my bagels and put in the water (about 3-4 at a time so you don’t over crowd) and cook 1 min per side. Then put on a baking sheet or two and brush on an egg wash and use any toppings you wish!
For english muffin bread I mixed: 1/2 cup active sourdough started, 2 cups bread flour, 1 cup of milk. Mix until it forms a dough and cover and let sit over night. In the morning at 1/2 cup more flour, 1 tsp salt, 1/2 tsp baking soda, 1 tbsp sugar and mix to form dough. I then grease and sprinkle corn meal in a loaf pan and put in my dough and cover and let rise another hour or so. Once it has risen some, preheat oven to 400 degrees F, and bake for 20-22 minutes.
