I know what some of you might think. That I eat, not so healthy to say the least. Lol! I promise that isn’t the case. Though I have a big love for tasty comfort foods, my family and I, while we aren’t on a “diet”, we do try to make our dinners a little on the healthier side than not. That’s not to say everything we eat is perfect, but we always try to throw veggies into the mix and some protein, and maybe a little less oil and cream than you’ve been seeing on here. This meal was inspired by a dish I saw on the Eating Well website. The original recipe does call for 4 or so pork chops, and uses Farro. My local grocery store was about out, but it’s okay, we actually often buy the Minute Rice Brown Rice and Quinoa mix from the store and we really like it! It’s really versatile and you can do many things with it, in a dish. The Broccoli is from their site as well, and I ended up giving it more of a citrus flavor. I have actually gotten quite a few ideas in the past from www.EatingWell.com for meals, and if you are ever in a hunch and don’t necessarily want to go on a diet but make some healthier choices, I highly recommend checking out their site for various dinner ideas, to keep things interesting! I wrote this meal to be for two, but if you must, cook your pork chops in batches and it will work fine. 🙂 I hope you like this meal as much as we did, and would love to hear your thoughts after trying it. Pork Chops with a Almond Butter and Lime Brown Rice, Quinoa, and Spinach Mix and Citrusy Broccoli and Almonds
A healthier meal to keep you and your family satisfied.
Ingredients
Pork Chops
- 3 Tbsp Lime Juice
- 1 Tbsp Almond Butter
- 6 Cloves Garlic, minced
- 1.5 Tsp Honey
- Salt
- Pepper
- 2 Bone-In Pork Chops
- 1 Tbsp Olive Oil
- 2 Pouches Minute Rice Brown Rice & Quinoa Mix, cooked
- 10 OZ Baby Spinach
- 2 Tbsp Chopped Walnuts
- Lime Wedges for Garnish
Broccoli
- 12 Oz Broccoli Florets, Steamed
- 2 Tbsp Any Citrus Flavored Chicken Marinade
- 2 Tbsp Slivered Almonds, Toasted
Instructions
Pork Chops
- Pat-dry Pork Chops, and season with salt and pepper.
- In a Cast Iron over Medium-High heat, put oil in, add Pork Chops and cook about 5 minutes per side or until cooked all the way through, and browned.
- Meanwhile, mix your lime juice, almond butter, garlic, honey, and salt and pepper to taste.
- Take Pork Chops out and set aside, putting foil on top to keep warm. Add more oil to pan, followed by your rice, stirring to heat though. Add your lime-almond butter mixture and stir to combine. Next you will add your spinach, a little at a time is fine, and stir and cook until spinach is wilted. Add your pork chops back to skillet and garnish with walnuts and lime wedges if you wish.
Broccoli
- In a bowl place your steamed broccoli in it.
- Put in your citrus glaze in with your broccoli, and stir to coat.
- Add almonds and stir to coat.
- Dish your Pork Chops and Rice Mixture, along with your Broccoli and Almonds.
- Enjoy!
