So I’ll be honest here. Some nights for dinner, just go on a whim. The original plan was a Quinoa Salad & Chicken Bowl but… LOL I’m a little burnt out on chicken for the week, so this was the result. And idk about you but I could eat a bowl of fried rice ANYTIME, ANYWHERE. This recipe is almost exact as my other fried rice recipe, and I will be sure to post that a long with any inspired others, below, so keep an eye out for that! Enjoy!

Fried “Rice” Quinoa Bowls
Ingredients
- 3 C Quinoa, cooked (it'll be about 1 cup when uncooked before you put it in.)
- 1 Onion, diced
- 4 Cloves Garlic, minced
- 1 bag Frozen mixed veggies, thawed out
- 2-3 Large eggs
- Fish Sauce, Liquid Aminos, or Soy Sauce to taste
- Olive Oil for cooking
Instructions
- In a Wok or large nonstick skillet, heat olive oil on med-high heat. Add in onions and cook, stirring occasionally, until soft and translucent, about 3 mins.
- Add garlic and cook, stirring frequently, until fragrant, about 30 seconds to a minute.
- Add in your quinoa and mixed veggies, and stir until heated through. Add fish sauce, or soy sauce to taste.
- Heat a seperate frying pan with cooking spray, on med-high heat. Add eggs like you would if you were frying them and just scramble onto the pan. Add to quinoa mix and stir until well combined.
- Serve in bowl and enjoy!
Notes
*I was a little hungry so I put a half of sliced avocado on top and it was delish!
