So this is one of my favorite things to make. It’s super easy, though I don’t know that I’ve ever gotten it to taste EXACTLY like the Chinese Restaurants I have been to, it is really good and is done in minutes.
I remember, In 2002, a major ice storm hit the Kansas City area, causing trees and power lines to go down, causing damage in many’s homes, and putting power out for weeks. I was in the 4th or 5th grade, and a friend of mines power was out, so my mom and I went to pick her up and bring her to our house, where we thankfully had power. Her mom gave my mom the recipe to this Egg Drop Soup, and I learned to make it very quick and have made it ever since.
Like I said this is a very easy way to make it, and I’m not aware if it’s the traditional way, but it’s made in literally a matter of minutes, and PERFECT on a cold day, or a sick day as well. I hope you enjoy it and it warms your soul like it does mine.
Easy Egg Drop Soup
Ready in minutes, to warm your soul. Perfect to put in a coffee mug and curl up on the couch in your jammies, while its cold outside and you have your favorite shows on. I hope you like it!
Ingredients
- 2 1/2 C Water
- 3 Chicken Bouillon Cubes
- 3 Tbsp Cornstarch
- 1 Large Egg, Beaten
- Dash of Sesame Oil (optional)
- Dash of Soy Sauce (optional)
- Scallions, for garnish
- Wonton Strips, for garnish (I just get mine in my local grocery store, near the salad toppings)
- Salt and Pepper, to taste
Instructions
- Add Bouillon Cubes and Cornstarch, while water is still cold and whisk to stir.
- Bring first three ingredients to a boil. The second it starts to boil, turn down, and with your whisk stirring in the boiling water, slowly pouring beaten egg in, until the egg resembles ribbons somewhat.
- Ladle into bowl, and garnish with scallions and wonton strips. Salt and pepper to taste, but taste the soup before adding salt. Because of the bouillon it usually already has enough.
