Lemon Garlic Shrimp with Roasted Vegetables
Ingredients
- 1 lb Shrimp Peeled and deveined
- 3 cloves Garlic minced
- 2 Tbsp Extra Virgin Olive Oil
- 1/2 Lemon juiced
- Salt and Pepper to taste
- Mixed Veggies (Such as cherry tomatoes, broccoli, and bell peppers)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, whisk together olive oil, garlic, lemon juice, salt, and pepper.
- Add the shrimp to the bowl and toss to coat evenly.
- Spread the vegetables on a baking sheet and toss with a little bit of olive oil.
- Place the shrimp on the baking sheet with the vegetables and roast for 8-10 minutes or until the shrimp are pink and cooked through.
- Serve hot and enjoy!
