What is it about breakfast for dinner that is just so good? Well, that is exactly what this was. You can of course whip this up anytime of the day you want, but seriously…is there some special ingredient that releases into the air only at night, to make breakfast taste better?! I don’t know. But maybe it is because typically in the morning I just want something quick and more on the refreshing side than the heartier side or savory side. Either way, no matter what time of the day you make this, I hope you enjoy, as usual!
Savory Mushroom and Spinach Eggs
Quick. Easy. Healthy. Delicious.
Ingredients
- 2 Tsp Olive Oil
- 1/4 C Sliced Mushrooms
- 1/2 C Spinach
- 2 Tsp Dried Chopped Onion
- 4 Large Eggs
- Dried Basil, to liking.
Instructions
- In a very small little frying pan, heat olive oil on medium heat. Add your onions and mushrooms and cook, stirring occasionally, until mushrooms tender and shrunk a little, about 4 minutes.
- Add in spinach and cook until wilted up a bit, about 3 minutes. Feel free to add just a little drizzle of olive oil if you feel needed.
- Add eggs to pan and cook without scrambling at first, add dried basil. Work a fork around the edges to keep from burning. Scramble twords the end when the bottom feels like it is more cooked.
- Plate and serve immediately.
