I am going to be completely transparent here.
I found this recipe or one similar on TikTok and I think it was a “Retro” meal of sorts, that got some smack talk in the comments but it turned out so good.
The meat mixture was one very similar to a sloppy joe mix, and we ended up with a lot of leftover meat from it. So what does that mean? Time to bake up some hamburger buns and I will be able to send leftovers to my Dad for the week. I call that a win-win!
Not to mention there is some weird comfort I find in meals with a Vintage Vibe to them. I hope you enjoy this meal too!
Meat and Cheese Stuffed Potatoes
Ingredients
- 5 Russet Potatoes, peeled and diced
- 1 Tbsp Butter
- Parsley Seasoning, to liking
- Drizzle of Oil
- 1 White or Yellow Onion, diced
- 1 lb Ground Beef
- Shredded Cheddar Cheese
- Seasonings: Salt, Pepper, Cumin, Garlic Powder
- 1 C Tomato Sauce
- 1 Tbsp Worcestershire Sauce
- 2 Tbsp All Purpose Flour
Instructions
- Preheat oven to 400 degrees.
- Put potatoes in pot with water and salt, and bring to boil. Cook for 15 minutes or until potatoes are tender.
- While potatoes cook, add oil to pan and diced onions. Cook until tender and add the ground beef and seasonings above. Cook, grounding up until ground beef is fully cooked.
- Add tomato sauce and Worcestershire sauce. Stir well to combine and then add in flour and stir until combined and meat mixture is thickened. Season with salt and pepper to liking.
- Drain potatoes and put in bowl with butter and parsley seasoning. Mash and then smooth out in bowl. Cut into 4 sections, and then take and roll into ball and press a "crater" in the center. Place in a 8×8 baking dish thats been coated with cooking spray. Add in a sprinkle of cheese, meat mixture, and more cheese.
- Put in oven for 10 minutes.
- Enjoy with a simple salad!
Notes
Simple salad was made by whisking olive oil, white wine vinegar, and salt and pepper, and then adding a arugula mix and shredded mozz. Toss well to combine!
